This was a super simple lunch to put together. I used a cookie cutter to cut out the sandwich and put St. Patty's themed sprinkles on top. There are pickles, applesauce, and candy coated sunflower seeds in the muffin cups. The sunflower seeds are actually left over from Christmas, so I just picked out the red ones!
This was last year's lunch, but I added it on here in case anyone wanted some more inspiration, and because it is my absolute favorite lunch I have ever done! The sandwich was cut with a circle cutter and the hat was made from a bell pepper, fruit leather, and vegan cheese. I decorated the face using shaved carrots, craisens, vegan cheese, and fruit leather. The rainbow sprinkles are candy coated sunflower seeds, and various fruit make up the rainbow on the side.
